With the sunshine slowly coming back to the Portland-area, it’s time to get moving and get outside. Start your day off right with this delicious protein-packed pancake/waffle recipe!
Protein is a vital building block of your muscles, cartilage, blood, bones and skin. Ensure that you’re getting enough while increasing your activity level.
1/4 c. steel-cut oats
1/4 c. low fat cottage cheese
1/2 tbsp. cinnamon
1/2 tsp. vanilla
2 egg whites
Blend ingredients very well in a blender or bullet until smooth.
Pour batter into a greased skillet and cook over medium low just like a normal pancake (or pour batter into a waffle iron).
Enjoy with or without butter and syrup.
One serving: 224 calories, 3 g. fat, 29 g. carbs, 18 g. protein.
